I love easy brownie recipes because they are almost a one bowl mix that you can whip up quickly, get into the oven and start baking.

The buckeye brownies are amazingly delicious and are perfect for those nights when you want to make some brownies and eat them warm while watching a movie or hanging out with friends and family.

Buckeyes

I’m pretty sure that when we say buckeyes these days that most people think of the peanut butter balls dipped in chocolate instead of the Ohio state tree with the large brown nuts.

I can remember my grandfather keeping a buckeye on the back porch, and he’d stick it in his pocket every day before heading out to work.

It was as smooth as silk because it had been riding around in his pocket for so long.

I’ve never seen a buckeye tree, but I have seen plenty of chocolate and peanut butter buckeyes that we all love.

Although I have to admit, I sure like these easy buckeye brownies with sweetened condensed milk because I am a big fan of brownies.

These are easy homemade brownies in a 13×9 inch dish. But, truth be told, they really are just glorified brownies that are absolutely wonderful and that I can’t get enough of!

The Buckeyes are a combination of moist homemade brownies and chocolate chips with a thick ribbon of peanut butter and sweetened condensed milk that runs throughout.

If you love these brownies, give these lunch lady brownies, Halloween brownies, and pecan pie brownies a try.

How do I make the fudgiest brownies?

Buckeye brownies truly are the fudgiest brownies and they are super easy to make.

  1. Start by adding the flour, unsweetened cocoa, and salt to a sifter and sift it into a medium-sized bowl and set aside.
  2. In a mixer, add the melted butter, sugar, vanilla extract, and the eggs and mix everything together.
  3. Next, add the sifted flour to the batter and mix well.
  4. In a small bowl, cover the chocolate chips with 1 tsp. flour and toss (to keep the chocolate chips from settling at the bottom). Pour the floured chocolate chips into the brownie batter and mix.
  5. Spread half of the brownie batter into a greased 9″ x 13″ casserole baking dish.
  6. In a medium-sized bowl, mix the sweetened condensed milk and peanut butter until combined and spread over the brownie batter.
  7. Spread the rest of the brownie batter over the sweetened condensed milk.
  8. Bake for approximately 45-50 minutes.
  9. Cool for about 45 minutes to one hour, cut, and serve.

Firstly, add 1-1/2 cups of flour, unsweetened cocoa, and salt to a sifter.

Sift the ingredients into a medium-sized bowl and set aside–you will be adding it later in the recipe.

Secondly, add the sugar and melted butter to a large bowl, or mixer, and mix well.

I used my Kitchenaid mixer for this recipe, but you can use a hand mixer, as well, because either one will work great.

Mixing the Brownie Ingredients

Thirdly, after you mix the butter and sugar, add the eggs and vanilla extract and mix. I meant to add the eggs one-at-a-time, but they decided to all go in the bowl at once, so that’s how I mixed them.

When cooking brownies it works better if you add the eggs one-at-a-time, but if you accidentally add them all at once that’s ok, it will still turn out good.

If you’re cooking a cake, it helps to add the eggs one-at-a-time because the eggs will incorporate easier and the cake won’t come out as rubbery.

Adding the eggs one-at-a-time helps make the batter thicken and work properly. Who knew so much science was involved in cooking?

Fourthly, add the sifted flour mixture to the bowl and mix everything together well.

Fifthly, in a small bowl, add the chocolate chips and 1 teaspoon of flour and toss the chips.

The reason you are going to be adding some flour to the chocolate chips is to keep them from sinking to the bottom of the brownie pan.

Seventh, add the can of sweetened condensed milk and peanut butter to a small to medium-sized bowl and mix together.

Now, spread the rest of the brownie batter on top of the sweetened condensed milk.

Baking the brownies

Finally, bake the buckeye brownies for about 45 to 50 minutes.

The insides will be a little bit gooey when they finish baking and that’s ok; however, if you feel like they need to cook a little more, go ahead and bake them for a few more minutes.

Y’all will love how the sweetened condensed milk and peanut butter create a pretty ribbon throughout.

How to cut brownies in a 9×13 inch pan

After the brownies have cooled, take a sharp knife and run it down the longer length of the pan, preparing for about three cuts in one direction, so you’re creating four rows.

Then, take the knife and cut in the shorter direction. You should be able to make about six or seven cuts.

After each slice through the brownies, wipe off the knife so that it runs through the next slice easier and doesn’t tear them up as you go.

Can I freeze the easy buckeye brownies?

Yes, you can freeze the buckeye brownies by cutting them up, after they’ve cooled, and layer in an airtight container with sheets of wax paper in between.

You can freeze the brownies for up to one month. Allow them to sit on the counter for at least an hour to thaw.

I let the brownies cool for about 45 minutes to one hour at the minimum, this way they will be easier to cut.

If you’re like me, it’s super hard to stay out of the warm brownies and if that’s the case you have my full permission to dig a little bit out of the corner while it’s still hot.

Go ahead and add a scoop of ice cream to the top and enjoy!

How many brownies in a 9×13 pan?

You should be able to get about 32 brownies in a 9″ x 13″ pan, but if you’d like to cut them larger, you can always do that, as well.

Where did brownies originate?

A woman named Fannie Farmer, in 1896 took her cookie and decided to put it in a rectangular pan and create what we know as a brownie.

However, as a fun fact, she didn’t add any chocolate to the recipe, so it was really more of a blondie.

Her recipe appeared in the Boston Cooking School Cookbook.

What do I do about undercooked brownies?

Sometimes brownies don’t want to cook in the center, so the best solution is to lower the temperature by about 25-degrees and let them cook a little longer.

If you noticed that the edges are getting done, but not the center, just lower the temp by 25-degrees and allow the brownies to continue cooking.
