Preparation is simple. Begin by putting together the vinaigrette.

  1. Add fresh orange zest, orange juice, red wine vinegar, olive oil, dried thyme, ground ginger, salt, pepper, and minced garlic to a large bowl. Whisk all ingredients together until combined well. Add the chopped kale, toasted almonds, and shredded carrots. Toss to coat and combine.
  2. Add additional salt and pepper to taste.

Garlicky Orange Kale Salad

This Garlicky Orange Kale Salad, with toasted almonds and grated carrots, is not only a delightful delicious side dish but it is packed with Vitamin A and Vitamin C.

Ingredients

  • 1 teaspoon orange zest
  • 2/3 cup fresh orange juice
  • 2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon ground black pepper, plus more to taste
  • 3 garlic cloves grated/minced garlic
  • 10 cups thinly chopped kale leaves (about 1 large bunch with stems removed)
  • 1 cup toasted sliced almonds
  • 1 1/2 cups shredded carrots

Instructions

  1. In a large bowl whisk together orange zest, orange juice, red wine vinegar, olive oil, dried thyme, ground ginger, salt, pepper, and grated garlic until blended. Add remaining ingredients and toss to coat. Salt and pepper to taste.
  2. Serve right away or cover and refrigerate until ready to serve.

    How long does the kale stay fresh with the dressing on it? I pack my lunch daily, so I’m thinking this will be a delicious and healthy option for lunch.

      The last time I made a huge batch we ate off of it for 3 days. The kale does soften a bit but it’s not mushy. Another option is to make the dressing separately then add a little dressing at a time as needed.
