Have you tried whipped cottage cheese yet? It’s such a simple thing but it has the consistency of cream cheese and you can make it sweet or savory. It’s especially nice for those that are not a fan of cottage cheese because of the texture. And it has a high protein content.

Well recently I’ve been in the mood for frozen cherries. So today I thought I’d use my frozen cherries to make this keto cherry whipped cottage cheese. And I made it two ways.

One was more like a dessert. I used cherry extract and cooked down the cherries to use a sauce and topping. This one took a few more minutes but I liked it better and it has less carbs. It has 5.2 grams of net carbs and 12.8 grams of protein.

The other I just used frozen cherries to make a completely blended cottage cheese. This version was easier, took only 5 minutes or less and used just 3 ingredients. However it wasn’t really low carb. It’s still very healthy and delicious but it had 12.5 grams of net carbs but 19.5 grams of protein. Either option is good.

Recipe ingredients and substitutes.

The simple ingredients I used for this recipe were frozen cherries, plain cottage cheese and sweetener. For the one version I also used cherry extract for extra flavor. FYI cherries have quite a few carbs but you can make this with lower carb berries like strawberries, raspberries or blackberries too.

Frozen Cherries
While you could use fresh cherries I think frozen is better, especially if you are going to make the version where you use them in a high speed blender. Since they are frozen they chill the cottage cheese and make it thicker.

One thing to note, make sure they are pitted and do not have any add sugar. The ingredients should only be cherries.

Good Culture Cottage Cheese
You can use any cottage cheese brand you want but this brand is low in carbs and very creamy. I love the texture and it’s very healthy for you. Usually full fat cottage cheese has less carbs than low fat.

And you can use either large or small curd cottage cheese. It all gets whipped together to create a creamy texture so it doesn’t matter.

Swerve Sweetener
Again you can use your favorite sweetener of choice but I love Swerve products and usually use them. I like confectioners powder sugar because it blends nicely.

Cherry Extract
This adds even more flavor and very few calories and no carbs. Note it doesn’t add sweetness, just flavor. This is optional and only used in the dessert version but it would be good in both versions. But you could skip it if you wanted.

How to make keto cherry whipped cottage cheese two ways.

Step 1: For the dessert and low carb version you want to first get the cherries cooking on the stove. Heat up a small pan over medium high heat. Add the fruit, sweetener and a couple tablespoons of water.

Step 2: Let this simmer for about 5-10 minutes until the cherries wilt and it starts to form a syrup of sorts from the juice. You won’t get too much sauce but enough to make this recipe. When done, set aside to cool down.

Note I made 3 desserts and used 3 cherries and bit of sauce on each one so you will probably have ½ of this recipe leftover. You can store it in the refrigerator and use it another time.

Step 3: Spoon the cottage cheese into a food processor or high speed blender. I like the food processor because it’s easier to scrape out all of the mixture compared to a blender but you can use either.

Step 4: Add the sweetener and extract and blend until it has a smooth and creamy consistency like below.

Step 5: I used 3 small dessert cups for this dessert recipe. So spoon the cottage cheese mixture into small dessert cups or bowls and top with some of the cherry sauce. Let chill before eating. Below you can see what they look like.

Step 6: For the other version you simple add the cottage cheese and sweetener. Blend until the cottage has no lumps and is creamy. Add the frozen cherry and blend some more until the cherries have totally pureed into the cottage cheese.

Taste test to see if it’s sweet enough for you and adjust accordingly. The cherries have a natural sweetness but you might want it sweeter. Spoon into bowl and let refrigerate for awhile. If you are using frozen berries you can eat it right away.

This version tastes more like thick cherry Greek yogurt but doesn’t have that sour taste. As a matter of fact this is a good substitute for yogurt. It’s very thick and creamy. I would eat this as a delicious breakfast or healthy treat.
