Ingredients

  • 5 oz. 140 g diced bacon or chorizo
  • 2 tbsp 2 tbsp butter
  • 8 oz. (7½ cups) 230 g (1.8 liters) fresh spinach
  • 8 8 eggeggs
  • 1 cup 240 ml heavy whipping cream
  • 5 oz. (1¼ cups) 140 g (290 ml) cheddar cheese, shredded
  • salt and pepper

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 350 °F (175 °C). Grease a 9x9 baking dish or individual ramekins.

  2. Fry the bacon in butter on medium heat until crispy. Add the spinach and stir until wilted. Remove the pan from the heat and set aside.

  3. Whisk the eggs and cream together and pour into a baking dish or in ramekins.

  4. Add the bacon, spinach, and cheese on top and place in the middle of the oven. Bake for 25–30 minutes or until set in the middle and golden brown on top.

Tips!

Try serving with shredded green or red cabbage on the side, with a homemade dressing. Delish!

You can also bake this frittata in the oven at 350 °F (175 °C) for about 20 minutes.

    I make this with whatever I have in the fridge. Today I cut up bacon, tomato and mushrooms and put in oven proof tin (cake tin actually) with a little olive oil and plenty of salt and pepper and put in oven on lowest setting (you could cook this part on hob if in a hurry). Then mixed 4 (large) eggs with double cream and added it and put back in oven, again on lowest temperature, for about 20 minutes. Turn off oven and leave egg to finish cooking in residual heat. If I use cooked meat or cheese I add with the eggs so they doesn't overcook. I'm afraid I can't give quantities as I mainly cook 'by eye' as I have been doing this for a while. Obviously if you're strict keto I expect you'd want to weigh the ingredients. This will be enough for me for 3 or 4 breakfasts.

    Frittatas are an excellent way to use up what you have in the fridge.

    I prefer to allow it to thaw overnight in the fridge and pop it into a toaster oven or reheat gently in a skillet.

    I meal prepped and chose this as my breakfast. I used an extra large muffin tin. I filled 5 cups with the liquid, then I added the bacon to the cup, then the spinach, and lastly the cheese. I have learned with frittas that it is easy to overcook. I really kept an eye on my frittata. It did need to cook a little longer. I let the frittas rest a few minutes before I removed them from the pan. My non-low carb husband loved them. They are really good. They also kept well....I ate them for 4 breakfasts (because the hubs and I shared one as a taste test). I highly recommend.

    We have not tested this with frozen spinach. If you'd like to try it, be sure and drain and squeeze the spinach well to get the extra liquid out.

    I’ve been on keto almost 3 yrs & i just want to encourage ppl how inexpensive, time-saving, convenient & just as healthy frozen spinach, broccoli, cauliflower, bell peppers, & berries are compared to fresh. My little freezer is full of on-sale frozen vegetables, salmon, ground beef, bacon & butter. Wish I had a bigger freezer!

    The portion size can vary depending on how much the dish condenses down as you cook it. We always list the number of servings (and that can be adjusted) to help gauge serving size. If you make 4 servings, then a serving is 25% of what you've cooked.

    Frittatas are excellent candidates for prepping a day ahead of time. Some people prefer to cook it and then refrigerate the frittata and just reheat it the next day.

    Hi, Denise! We haven't tried it, but you could try omitting the cheese and substituting the heavy cream for unsweetened almond or coconut milk.

    There is reference to cooking on lowest temperature as one of the options bit both temperatures given in instructions are 350.

    Damn this is good!!! Started this comment after first bite. I have made several egg dishes that are pretty similar but this one shines! Perhaps it was the applewood D'Artagnan bacon I used but it was divine! I used freshly grated cheddar as well as the pre-grated has cornstarch (=carbs) to keep it from clumping. I cut the recipe in half (2 servings) and got 3 good sized ramekins out of it! Will make again and again!!! Thank you Anne!
