  • Boiling water. This helps activate the gelatine in the jello to form its classic jiggly texture once set.
  • Lemon simple syrup. See below for how to make it.
  • Lemon. Freshly-squeezed.
  • Vodka alternative. I love using Ritual Zero Proof; You can also use regular Vodka.
  • Gummy bears. I like to use healthier ones made with Real Fruit.

How To Make Lemon Simple Syrup

In a saucepan over medium-high heat, add together all ingredients (stirring them to combine) and bring to a boil, about 1-2 minutes. Reduce the heat to low and simmer for another 2-3 minutes or so. Remove from heat.

INGREDIENTS:

  • Filtered water. This will cook down and thicken.
  • Lemon. Sliced.
  • Organic cane sugar. This will melt down to become a syrup to sweeten the jello shots.

Ingredients

JELLO SHOTS:

  • 1 (3 oz.) baox lemon-flavored Jello mix
  • 1 cup boiling water
  • ½ cup lemon simple syrup
  • 1 lemon, freshly-squeezed
  • 4 oz. Vodka alternative (I love using Ritual Zero Proof; You can also use regular Vodka)
  • 1 (5 oz.) package Gummy bears (I like to use healthier ones made with Real Fruit)

LEMON SIMPLE SYRUP:

  • ½ cup filtered water
  • 1 lemon, sliced
  • ¼ cup organic cane sugar (See Notes)

Instructions

TO MAKE THE LEMON SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add together all ingredients (stirring them to combine) and bring to a boil, about 1-2 minutes.

  • Reduce the heat to low and simmer for another 2-3 minutes or so. Remove from heat.

TO MAKE THE JELLO SHOTS:

  • In a bowl, add together the jello mix and boiling water, stirring until the jello mix has dissolved. Add the lemon simple syrup, lemon juice, and vodka alternative, stirring to combine. Let everything cool until at room temperature for quicker "set" time in the fridge.

ASSEMBLE + CHILL:

  • In shot-size glasses, add a few gummy bears at the bottom of each cup and pour the lemon jello mixture atop gummy bears until ¾ filled. Place filled glasses atop a small baking sheet for greater ease and add to the refrigerator and chill for at least 4 hours. Best when chilled overnight. NOTE: the smaller the shot glasses, the more servings it'll make. For larger shot glasses, the least amount of glasses are filled.

  • When chilled completely and "set", remove the shot glasses from the refrigerator and top with additional gummy bears in each glass.

  • Scoop and Enjoy!
