"This is a Awesome (!) meatloaf that I've adapted from a turkey meatloaf recipe from allrecipes.com. The original recipe calls for 2# of ground turkey, but this recipe is better with 1# of ground chicken and the added shredded veggies. You can use ground turkey, but I personally prefer the milder taste of ground chicken. This meatloaf tastes amazing and is a great way to incorporate more colorful veggies into your menu (or to hide them for picky little ones). Bon apetit!"

 1. I made this for dinner and we liked it very much. Next time I may back off on the amount of bread crumbs or, as another chef did, use oats instead. This meatloaf made a good, albeit mild, sandwich the next day. I omitted the ketchup and none of us missed it. Thanks for posting such a healthy and delicious meatloaf.

 2. I loved this and so did my husband. I too made some modifications. I used 12 grain bread to add whole grain, and it was still very nice. I also waited until the last 10 minutes to add the ketchup. I did have to drain off fat before I put the ketchup on, so don't be surprise if that happens.

 3. Delicious recipe! I did change a few things around as I needed to use what I had on hand. I added 1/2 lb Johnsville italian mild sausage and added dijon mustard and brown sugar to the ketchup for topping meatloaf. Added some chopped fresh broccoli and green bell pepper and omitted zucchini as I didnt have any. Also added 2 slices of provolone cheese in middle of meatloaf. I baked it for a hour and half at 400' . Thanks for sharing the recipe!! We enjoyed it!!

 4. Just made a version of this meatloaf with a few of my own twists and it was so tasty. My very picky 7 year loved and said that I need to make this all the time now. This is definitely going to have a repeat on our dinner table.

Progresso bread crumbs; the mozzarella and cheddar cheeses for 1 1/2 c. Kroger brand casserole cheese blend.
Also subbed 3 heaping Tbl. Italian seasoning for Italian herb seasoning
Added 2 tsp Mrs. Dash original
Reduced milk to 3/4 c.
Increased carrot and zucchini to 1/2 c.
Baked in 8"x8" greased glass dish for 50 minutes, internal temp reached almost 190º.
Super delicious!

I am a SAHM who loves to cook for my small family! I have a 14 month old daughter, a wonderful husband, a seven year-old Keeshond and a cat named Rex Manly. I really just love this website! I visit it practically every weekday for ideas and recipes and try to always post a review of everything I make from Zaar. The only time I don't is when I have a negative reaction to a recipe that was due to my mistake or if I have substituted so many ingredients that it wouldn't be a fair review. Thanks to all of you wonderful cooks who have made me a better cook myself!

What makes meatloaf less dense? ›

According to Food52, the restaurant uses a ratio of two pounds of meat to two pounds of water. As simple as it sounds, this will make your meatloaf lighter and more moist without reducing the texture to crumbles. Food52 recommends incorporating the water at two different stages of the cooking process.

What ingredient keeps meatloaf from falling apart? ›

Binders like eggs or breadcrumbs will certainly help to keep your meatloaf together.

Why do you put milk in meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

What does adding an extra egg to meatloaf do? ›

Sure, egg yolks add some rich flavor to a meatloaf, but the real reason we need eggs is for structure—to help bind the meatloaf together. This is especially important since we're making a free-form meatloaf, or one that you shape by hand, versus using a loaf pan.

What happens if you put too many eggs in meatloaf? ›

Fewer eggs will create a denser and firmer meatloaf that will be more compact and easier to slice, but more eggs can create a more tender and light texture that allows the meatloaf to melt in your mouth.

What happens if you forgot to put milk in meatloaf? ›

Milk adds richness and moisture, while the bread helps keep the meatloaf texture softer. So, omitting milk would omit some creaminess and moisture. Those can be easily subbed out by many other ingredients like chicken stock, cream, butter, etc.

Can you put too many breadcrumbs in meatloaf? ›

Adding more to your mixture is always easier than taking some out. Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf.

What can I use instead of breadcrumbs in meatloaf? ›

However, overmixing can cause meatloaf to become springy, rubbery, and too dense. If that myosin network gets built up too much, it's bad news for the texture of your loaf.

Can you overmix meatloaf? ›

Eggs are a binder, but for a really moist meatloaf you need to soak the bread crumbs in milk (I use fat-free half-and half). You should have some minced onions, but you should not overmix the ingredients (the longer you work the ground meat, the denser the loaf will be).

What is the basic meatloaf formula? ›

In essence, it boils down to a few simple steps: Combine ground meat, eggs, breadcrumbs, and other flavorful ingredients of your choice. Put this mixture in a lightly greased loaf pan and bake it until it's cooked through.
