If you've been following Orchids + Sweet Tea for a while (thank you!), you know I absolutely LOVE spicy food. Growing up with Southern + Jamaican roots, I practically ate Scotch bonnet peppers in everything, thanks to my family's homemade Jamaican Green Seasoning—a spicy staple in my fridge! So, it's no surprise that when it comes to hot dogs, I like them spicy too. Enter the Summer Grilled Andouille Sausage Hot Dog!

Andouille sausage has this amazing bold, smoky, + spicy flavor, thanks to garlic, onions, and Cajun spices. It’s so good in a fluffy brioche bun with bread and butter pickles and some homemade green sauce. If you prefer, you can always choose a gluten-free bun or a milder sausage also. This combo is perfect for BBQs, game days, and summer get-togethers!

And if you’re a fellow spice lover like me looking for more spicy summer food ideas, definitely try my Spicy Honey Glazed Salmon Salad, Spicy Butter Chickpeas, Spicy Hot Honey Crispy Chicken Sandwich, or my Spicy Jamaican Beef Patties next!

What Is Andouille Sausage?

Andouille sausage is a smoked sausage with roots in France, but it's widely known for its association with Cajun cuisine in Louisiana. Made from pork and seasoned with garlic, onions, and Cajun spices, it has a bold, smoky, and spicy flavor profile.

It's a staple in Southern recipes, found in classics like Gumbo and Jambalaya, as well as comfort foods such as mac + cheese and even cornbread.

How To Make Summer Grilled Andouille Sausage Hot Dogs

Even though they're called grilled hot dogs, you can just as easily cook them in the oven or on the grill, depending on what you're in the mood for. Whip up your easy green sauce by blending mayo, parsley, lemon juice, salt, and garlic until it's nice and smooth. Then, all that's left to do is assemble your creation and dig in!

Ingredients

SAUSAGE HOT DOGS:

  • Andouille sausage. I like to use premium organic sausages for the best flavor but you can use whatever is available + you prefer.
  • Brioche hot dog buns. You can also use regular hot dog buns.
  • Extra virgin olive oil. Feel free to use your favorite high-qualityEVOO. My fave tried and trusted brand isCalifornia Olive Ranch.
  • Seasonings + herbs. Sea salt, black pepper, smoked paprika, garlic powder + Italian seasoning.
  • Sweet relish or bread & butter pickles. These add a nice punch of flavor and crunchy texture.
  • Sweet peppers. Diced.

EASY GREENS SAUCE:

  • Vegan mayonnaise. You can use regular mayo, if desired.
  • Fresh parsley. Brings a bright, herbaceous flavor.
  • Garlic cloves. Adds a robust, savory kick.
  • Lemon. Freshly squeezed is best.
  • Sea salt.

Add the mayo, parsley, lemon juice, salt, and garlic cloves into a high-powdered blender and blend until sauce becomes fully broken down and smooth.

How To Cook Andouille Sausage

There are two methods I can recommend. The first is the obvious choice: grilling. But you can also cook these in the oven. Trust me, I get that sometimes you don't want to haul out the grill. Here's how to cook them both ways:

IN THE OVEN:

  • Preheat the oven to 450 degrees Fahrenheit. Using a grill pan, spray with cooking oil. Add the coated sausages, lining them side by side onto the grill pan. Bake for 8-10 minutes-----flipping onto their opposite sides halfway through to ensure the perfect grill marks.

ON A GRILL:

  • Prepare your grill for indirect cooking, creating a zone of direct high heat & a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling.
  • Once the grill is hot enough, place the sausages directly on the indirect heat side of the grill, arranging the sausages as close to the direct heat as possible without being directly over the flame. Then close the lid & cook for 4-5 minutes. NOTE: The heat from the direct heat side of the grill will circulate around the sausage, cooking them with really gentle indirect heat.
  • After 4-5 minutes, flip the sausages onto their opposite sides, and cook over indirect heat for another 4-5 minutes. NOTE: A thermometer inserted in the center of the sausage should register a temperature of 150 degrees F when fully cooked through.

Can I Use Other Types Of Sausage?

Absolutely! You can totally switch up the sausages for this hot dog. Try bratwurst for a mild, savory taste or Italian sausage for a sweet or spicy, herby kick. Chorizo adds a spicy, smoky flavor, and Polish kielbasa gives a nice garlicky, smoky touch. If you're looking for something lighter, go for chicken or turkey sausage. Vegan sausage is a great plant-based option, too. Smoked sausage is also awesome for a deep, smoky flavor.

How to store?

Leftover grilled sausages can be stored for 2-4 days in an airtight container in the refrigerator. And if you're all about making your own hot dogs for months in advance, then you can freeze them for 3-4 months (at best). Defrost by adding them to the refrigerator overnight and then reheating them in the oven until fully warmed/heated through.

Can I make the green sauce ahead of time?

Yes, you can make the green sauce in advance. Blend mayo, parsley, lemon juice, salt, and garlic until smooth, then store it in the fridge until you're ready to use it.

How do I toast the buns?

Lightly butter the buns and place them on the grill for a few minutes until they are golden brown and slightly crispy. You can also toast them in a hot oven for a few minutes.

How do I prevent the sausages from bursting?
